Lemon Herb Roasted Potatoes

These golden roasted baby potatoes deliver brightness and depth with the addition of Perricone Farms Lemon Juice. Ingredients
  • 2 lbs baby potatoes, halved
  • ¼ cup Perricone Farms Lemon Juice
  • ¼ cup olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp fresh parsley, chopped (for garnish)
Instructions
  1. Preheat the oven to 400°F.
  2. In a large bowl, toss the baby potatoes with Perricone Farms Lemon Juice, olive oil, salt, pepper, and Italian seasoning until evenly coated.
  3. Line a baking sheet with parchment paper and spread the potatoes in a single layer.
