Lemon Herb Roasted Potatoes
These golden roasted baby potatoes deliver brightness and depth with the addition of Perricone Farms Lemon Juice. Ingredients
- 2 lbs baby potatoes, halved
- ¼ cup Perricone Farms Lemon Juice
- ¼ cup olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F.
- In a large bowl, toss the baby potatoes with Perricone Farms Lemon Juice, olive oil, salt, pepper, and Italian seasoning until evenly coated.
- Line a baking sheet with parchment paper and spread the potatoes in a single layer.
- Roast for 15–20 minutes, or until the potatoes are tender and golden.
- Transfer to a serving dish and top with chopped fresh parsley.
